Our scrumptious vegan tofu kebabs are simple to prepare and use appetising smoked tofu along with a medley of mediterranean vegetables.
You could also use ground cumin and coriander for a more middle eastern flavour. Soak the wooden skewers before hand to help prevent them from burning on the barbecue.

- 120g smoked tofu
- 1/2 bell pepper, red, yellow or green
- 1/2 courgette
- 8 cherry tomatoes
- 1/2 onion
- 1 tbsp oil for baking (avocado is a good option as it withstands high temperatures)
- pinch dried basil
- pinch dried thyme
- pinch ground cumin, optional
- pinch ground coriander, optional
- 3 pinches sea salt
- 3 pinches pepper
Method
- Cut tofu, courgette and bell pepper into large pieces, halve cherry tomatoes, slice onion into chunks.
- Put tofu and vegetables into a bowl, add oil and seasoning, and mix to coat evenly.
- Spear tofu and vegetables onto skewers and cook in grill oven, on grill pan or on barbecue.
